Veggie Sausage Egg Bites

Before the Stay at Home orders, I would go to Starbucks almost every morning to get coffee and sometimes breakfast. Once I had to start taking vitamins and my health more seriously I started to grab breakfast from there too. It was also easier for me because in the mornings before work I started to have a big appetite. I would order the Roasted Red Pepper Egg Bites with a Grande Dark Roast with a splash of coconut milk. I know I sound like one of those people, but hey I like my coffee with a little bit of milk.

Buying egg bites every morning became too much and I wanted that taste of meat too. I looked up an egg but recipe and tweaked it to include vegan meat, but real cheese (it’s hard for me to give up dairy).

Here’s the recipe:

4 sausage patties (Morningstar farms Sausage patties) chopped

1 cup of spinach chopped

20 grape tomatoes chopped

5 eggs

1/2 tub of jalapeño cream cheese (Philadelphia)

3 garlic cloves minced

2 green onions chopped

1 cup of shredded cheese (triple cheddar and Italian)

4 dabs of hot sauce (optional)

2 shakes of red pepper flakes (optional)

Mix all the ingredients together in a bowl, and evenly divide it out into a muffin pan. I used a very small muffin pan so they were more like bites and less like muffins.

Bake on 350 degrees for 20 mins. 15 on the middle shelf and 5 on top shelf.

Then enjoy your meal prepped egg bites!
