Cooking in the kitchen is possibly one of my favorite things to do. Highly calming and a wonderful exercise. Yes exercise! I for sure feel myself burning calories as I do it. This chicken was amazing!
I’m calling it Lemon Butter Parmesan Chicken with Fettuccine. Remember my pictures are not that great. This is the beginning of my journey.
Lemon Butter Parmesan Chicken
This recipe calls for:
1 box of Fettuccine (I used Barilla)
1/2 lb. Chicken Breasts
Parmesan cheese (let’s be real I used a lot)
2 Lemons or 1/2 cup of lemon juice
2 cloves of Garlic or garlic powder
1 Tbs Butter
1 tsp of Salt
1 Tbs. Seasoning salt
1 Tbs. Pepper
1 tsp. of Parsley flakes
1 tsp of Italian seasoning
1 Tbs Olive Oil
1 cup of Apple Cider Vinegar or Vinegar
For preparation, I first washed my chicken breasts with apple cider vinegar and rinsed it about 3-4 times. Need to make sure it’s clean!
To season: I rubbed the chicken with garlic powder, seasoning salt, salt, pepper, parsley flakes, and Italian seasoning to taste. In a frying pan I put some olive oil, not to coat, but just enough for searing. I added the chicken into the pan and let them cook some. Once they got some color I added in the butter. Just enough where it starts to become sauce like and my lemon juice. I let the chicken soak up the flavor and get the nice brown color it has there.
For the pasta: I cooked it according to the directions. I put in 2 cups of water lots of salt. Your pasta water needs to be salty. Let the water boil. When it boils, add in the pasta and cook it until it is tender. This will take about 6-8 minutes it get it al dente.
Once everything is done I plated the chicken next to the pasta, added a bit of the sauce I created and topped everything off with a lot of Parmesan cheese. I love Parmesan cheese!
